Ingredients

  • 1 cup Green or brown lentils
  • 3 cups Water
  • 0.5 teaspoon Salt
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 0.25 cup Red onion
  • 0.5 cup Feta cheese, crumbled
  • 0.25 cup Fresh parsley, chopped
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 clove Garlic, minced
  • 0.25 teaspoon Ground black pepper
  • 0.25 teaspoon Cumin powder (optional)

Directions

Step 1

Rinse the lentils thoroughly under cold water. Drain and transfer them to a medium saucepan.

Step 2

Add 3 cups of water and 0.5 teaspoon of salt to the saucepan with the lentils. Bring to a boil over medium-high heat.

Step 3

Once boiling, reduce the heat to a simmer and cook for 20-30 minutes, or until the lentils are tender but not mushy. Drain and set aside to cool to room temperature.

While the lentils are cooling, chop the cucumber into small bite-sized pieces, halve the cherry tomatoes, and finely dice the red onion.

Step 5

In a small bowl, whisk together olive oil, lemon juice, minced garlic, ground black pepper, and cumin powder (if using) to create the dressing.

In a large mixing bowl, combine the cooked lentils, chopped cucumber, cherry tomatoes, diced red onion, crumbled feta cheese, and fresh parsley.
