  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 Whole wheat pita pockets
  • 1 cup Mixed greens or spinach

Directions

Step 1

In a large mixing bowl, combine the cooked quinoa, cooked lentils, crumbled feta cheese, cherry tomatoes, cucumber, red onion, and parsley.
