  • 1 cup Red lentils
  • 1 cup Green peas (fresh or frozen)
  • 2 medium Potatoes
  • 1 medium Onion
  • 3 pieces Garlic cloves
  • 1 inch Fresh ginger
  • 2 medium Tomatoes (fresh or canned)
  • 1 cup Coconut milk
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground coriander
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 3 cups Water
  • 2 tablespoons Fresh cilantro (optional, for garnish)

Directions

Step 1

Rinse the red lentils under cold water until the water runs clear. Set them aside to drain.

Step 2

Peel and dice the potatoes into bite-sized cubes. Finely chop the onion, garlic, and ginger.

Step 3

Dice the tomatoes if using fresh ones.

Step 4

In a large pot, heat the vegetable oil over medium heat. Add cumin seeds and toast for 30 seconds until fragrant.

Add the chopped onion and sauté until golden, about 5 minutes.
