Heat olive oil in a large skillet over medium heat. Sauté the onion and carrot until softened, about 5 minutes.
Add the minced garlic and cook for an additional minute until fragrant.
Stir in the lentils, vegetable broth, tomato paste, ground cumin, paprika, ground coriander, salt, and black pepper. Bring the mixture to a boil, then lower the heat and simmer uncovered for 25-30 minutes, or until the lentils are tender and the liquid has mostly absorbed.
Remove the lentil mixture from heat and let it cool completely before assembling the pasties.
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Lightly flour your work surface and roll out the thawed puff pastry sheets. Cut them into 6 equal squares (three squares from each sheet).
Spoon about 2-3 tablespoons of the cooled lentil mixture onto one half of each puff pastry square, leaving a border around the edges.
Fold the other half of the pastry over the filling to create a triangle. Press the edges together with a fork to seal, and transfer the pasties to the prepared baking sheet.
Brush the tops of the pasties with beaten egg for a golden finish, if using. Sprinkle with sesame seeds, if desired.
Use a knife to cut a small slit or two on the top of each pasty to allow steam to escape during baking.
Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
Remove from the oven and allow the pasties to cool slightly before serving.
