  • 4 Frankfurters (hot dogs, sliced)

  • 1 medium Potato (peeled and diced)
  • 6 cups Vegetable broth (or chicken broth)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Bay leaf
  • 1 tablespoon Olive oil
  • 2 tablespoons Parsley (chopped, for garnish)

Directions

Step 1

Rinse the lentils thoroughly under cold water and set aside.

Step 2

In a skillet, heat olive oil over medium heat. Add the diced onion, carrot, celery, and potato. Sauté for 5-7 minutes until the vegetables begin to soften.
