Ingredients

  • 1 teaspoon Paprika
  • 0.5 teaspoons Ground turmeric
  • 2 tablespoons Tomato paste
  • 2 cups Vegetable broth
  • 1 teaspoon Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro or parsley, chopped (optional)

Directions

Step 1

Rinse the lentils thoroughly under cold water until the water runs clear. Set them aside.

In a large pot, heat the olive oil over medium heat.

Add the chopped onion, diced carrot, and diced celery. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables are softened.
