Ingredients

  • 1 cup Cooked lentils
  • 1.5 cups All-purpose flour
  • 0.5 cup Rolled oats
  • 0.5 cup Unsalted butter
  • 0.75 cup Brown sugar
  • 0.25 cup Granulated sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Cinnamon
  • 0.75 cup Chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a food processor, blend the cooked lentils until smooth. Set aside.

In a medium-sized mixing bowl, whisk together the flour, oats, baking soda, salt, and cinnamon.

In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy using a hand or stand mixer.
