Ingredients

  • 1 cup Cooked lentils
  • 1 cup Cooked chickpeas
  • 0.5 cup Rolled oats
  • 0.5 cup Breadcrumbs
  • 2 cloves Garlic, minced
  • 0.5 cup Yellow onion, finely diced
  • 2 tablespoons Parsley, chopped
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 0.5 cup Plain Greek yogurt (for coriander cream)
  • 2 tablespoons Fresh coriander (cilantro), finely chopped
  • 1 tablespoon Lemon juice
  • 1 pinch Salt (for coriander cream)

Directions

Step 1

Add the cooked lentils and chickpeas to a large mixing bowl and mash them using a fork or potato masher until mostly smooth with some texture remaining.

Step 2

Stir in the rolled oats, breadcrumbs, minced garlic, diced onion, chopped parsley, ground cumin, paprika, salt, and black pepper. Mix until well combined.
