Ingredients

  • 1 cup Dry green or brown lentils
  • 3 cups Water
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 2 Garlic cloves, minced
  • 1 medium Carrot, grated
  • 1 cup Breadcrumbs
  • 2 large Eggs
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Vegetable oil (for frying)

Directions

Step 1

Rinse the lentils under cold water and place them in a medium saucepan with 3 cups of water.

Step 2

Bring to a boil, then reduce the heat and simmer until the lentils are tender but not mushy, about 15-20 minutes. Drain and let cool slightly.

While the lentils are cooking, heat 2 tablespoons of olive oil in a skillet over medium heat.
