  • 1 15-ounce can diced tomatoes (canned)
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoons black pepper
  • 2 cups spinach (fresh)
  • 1 tablespoon lemon juice (freshly squeezed)

Directions

Step 1

Rinse the lentils thoroughly under cold water and set aside.

Step 2

In a large pot, heat the olive oil over medium heat.

Add the diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes until the vegetables are softened and the onions are translucent.
