Ingredients

  • 2 medium carrot, diced
  • 2 medium celery stalks, diced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup dried green or brown lentils, rinsed
  • 0.5 cup pearled barley
  • 6 cups vegetable stock
  • 1 14-ounce can canned diced tomatoes (with liquid)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and cook for 3-4 minutes until softened and translucent.

Step 3

Add the minced garlic, diced carrots, and diced celery. Cook for an additional 4-5 minutes, stirring occasionally.

Step 4

Stir in the cubed sweet potatoes, lentils, barley, vegetable stock, and canned diced tomatoes, including their liquid.
