  • 1 pound turkey sausage (sliced or crumbled)

  • 2 medium carrot (peeled and diced)
  • 2 stalks celery stalks (diced)
  • 3 cloves garlic cloves (minced)
  • 1 cup dried lentils (rinsed and drained)
  • 6 cups chicken or vegetable broth
  • 1 14.5-ounce can canned diced tomatoes (with juice)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 leaf bay leaf
  • 2 cups fresh spinach (optional, roughly chopped)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the sliced or crumbled turkey sausage and cook for 5-7 minutes, stirring occasionally, until browned. Remove the sausage from the pot and set aside.

Step 3

In the same pot, add the diced onion, carrot, and celery. Sauté for 5 minutes or until the vegetables are softened.

Stir in the minced garlic and cook for an additional 1 minute until fragrant.
