  • 1 cup red lentils, rinsed and drained
  • 14.5 ounces canned diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion, carrot, and celery to the pot. Sauté for 5 minutes until the vegetables are softened.

Stir in the minced garlic, ground cumin, paprika, and coriander. Cook for 1 minute until fragrant.
