  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1.5 cups lentils, rinsed and drained
  • 1 14-ounce can diced tomatoes, with juices
  • 6 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups baby spinach (optional)
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the spicy Italian sausage, breaking it into small pieces with a wooden spoon. Cook for 6–8 minutes, or until browned. Remove the sausage from the pot and set it aside.

Step 3

In the same pot, add onion, carrots, and celery. Cook for 5–7 minutes, stirring occasionally, until the vegetables soften.

Stir in the minced garlic, ground cumin, smoked paprika, and dried thyme. Cook for 1–2 minutes, until fragrant.
