Ingredients

  • 2 links lean turkey sausage links
  • 1 large yellow onion, diced
  • 2 medium carrot, diced
  • 2 stalks celery stalk, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 6 cups low-sodium chicken broth
  • 1 cup brown or green lentils, rinsed
  • 0.5 cup brown rice, rinsed
  • 1 cup crushed tomatoes (canned)
  • 2 cups baby spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Slice the turkey sausage into thin rounds and add to the pot. Cook for 4-5 minutes, stirring occasionally, until lightly browned. Remove with a slotted spoon and set aside.

Step 3

In the same pot, add the diced onion, carrot, and celery. Sauté for 5-6 minutes until the vegetables are softened.
