Ingredients

  • 200 grams Green or brown lentils (dry)
  • 2 tablespoons Olive oil
  • 1 medium Red onion
  • 2 cloves Garlic cloves
  • 1 medium Carrot
  • 1 stalk Celery stalk
  • 400 grams Canned diced tomatoes
  • 250 milliliters Vegetable stock
  • 1 teaspoon Dried oregano
  • 1 teaspoon Smoked paprika
  • 100 grams Baby spinach
  • 150 grams Feta cheese
  • 2 large Eggs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Rinse the lentils under cold water and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Finely chop the onion, garlic, carrot, and celery, then sauté them in the skillet for 5-7 minutes until softened.

Stir in the oregano and smoked paprika, cooking for another minute until fragrant.
