Ingredients

  • 2 carrot, diced
  • 2 celery stalk, diced
  • 3 garlic cloves, minced

  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 cup diced tomatoes (canned)
  • 4 cups vegetable broth
  • 2 cups baby spinach (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Rinse the lentils thoroughly under cold water. Set aside.

Step 2

Heat olive oil in a large pot over medium heat.

Step 3

Add diced onion, carrot, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Add minced garlic, ground cumin, ground coriander, and smoked paprika. Stir well and cook for 1-2 minutes until fragrant.
