Ingredients

  • 1 cup short-grain white rice
  • 2 cups water
  • 3 cups whole milk
  • 1 cup heavy cream
  • 0.75 cup granulated sugar
  • 2 tablespoons unsalted butter
  • 1.5 teaspoons vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup raisins (optional)

Directions

Step 1

In a medium saucepan, combine the rice, water, and salt. Bring to a boil over medium-high heat.

Step 2

Once boiling, reduce the heat to low and simmer, covered, for about 10 minutes or until the water is mostly absorbed.

Step 3

Stir in the milk, heavy cream, sugar, and butter. Raise the heat to medium and bring to a gentle simmer, stirring frequently to prevent the rice from sticking to the bottom.

Step 4

Lower the heat to maintain a gentle simmer and cook, stirring often, for 35-40 minutes or until the mixture thickens to your desired consistency. The pudding will continue to thicken as it cools.

Step 5

Remove the saucepan from the heat and stir in the vanilla extract and ground cinnamon. If using, fold in the raisins at this time.

Step 6

Transfer the rice pudding to serving dishes or a large serving bowl. Let cool slightly before serving warm, or refrigerate for a chilled version.

Step 7

Garnish with a dash of cinnamon on top before serving, if desired.
