Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 0.25 cup unsalted butter, melted and cooled
  • 0.75 cup mandarin oranges, drained and chopped
  • 1 cup cranberries, fresh or frozen
  • 0.5 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease six mini loaf pans or line them with parchment paper.

Step 2

In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Stir well to ensure the dry ingredients are evenly mixed.

Step 3

In a separate medium-sized bowl, whisk together the melted butter, milk, egg, and vanilla extract.

Step 4

Add the wet ingredients to the dry ingredients and mix until just combined. Avoid overmixing, as this can make the loaves dense.

Step 5

Gently fold in the mandarin oranges, cranberries, and orange zest until evenly distributed.

Step 6

Divide the batter evenly among the prepared mini loaf pans, filling each about 2/3 full.

Step 7

Place the pans on a baking sheet and bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of a loaf comes out clean.

Step 8

Remove the loaves from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve the mini loaves warm or at room temperature. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
