Ingredients

  • 150 grams unsalted butter
  • 100 grams powdered sugar
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 120 grams all-purpose flour
  • 1 pinch salt

Directions

Step 1

Preheat your oven to 350°F (180°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream the unsalted butter and powdered sugar together using a hand mixer or stand mixer until light and fluffy, about 3-4 minutes.

Step 3

Add the egg whites one at a time, mixing well after each addition. The mixture may look slightly curdled at this stage, but this is normal.

Step 4

Mix in the vanilla extract and a pinch of salt until fully incorporated.

Step 5

Sift the all-purpose flour into the wet ingredients and fold gently using a spatula, making sure not to overmix. The batter should have a smooth and soft consistency.

Step 6

Transfer the batter into a piping bag fitted with a small round nozzle (approximately 1/4-inch or 6mm wide).

Step 7

Pipe 2- to 3-inch (5-7 cm) long strips onto the prepared baking sheets, leaving about 2 inches (5 cm) of space between each strip as they will spread during baking.

Step 8

Bake in the preheated oven for 10-12 minutes or until the edges of the cookies are golden brown and the centers remain pale.

Step 9

Remove from the oven and allow the cookies to cool on the baking sheet for 2-3 minutes before carefully transferring them to a wire rack to cool completely.

Step 10

Store in an airtight container for up to a week, and enjoy with tea, coffee, or as a light snack!
