Ingredients

  • 1 cup pearl barley
  • 2.5 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 1 medium zucchini, diced
  • 3 cloves garlic, minced
  • 2 cups spinach, chopped
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the pearl barley under cold water using a fine mesh sieve.

Step 2

In a medium saucepan, bring the vegetable broth to a boil. Stir in the barley, reduce the heat to low, cover, and simmer for 25-30 minutes, or until the barley is tender and has absorbed most of the liquid.

Step 3

While the barley cooks, heat the olive oil in a large skillet over medium heat. Add the diced onion and carrots, cooking for 3-4 minutes until softened.

Add the diced zucchini and cook for an additional 3 minutes, stirring occasionally.
