Ingredients

  • 500 grams ground veal
  • 60 grams breadcrumbs
  • 50 grams grated Parmesan cheese
  • 15 grams fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tablespoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 250 milliliters chicken or vegetable stock

Directions

Step 1

In a large mixing bowl, combine the ground veal, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, large egg, lemon zest, salt, and black pepper. Mix gently until just combined. Do not overmix to ensure tender meatballs.

Step 2

Using clean hands or a small scoop, form the mixture into meatballs, about 1.5 inches in diameter. Place them on a plate or tray.

Step 3

Heat the olive oil in a large skillet over medium heat. Once hot, carefully add the meatballs in a single layer, ensuring they are not overcrowded. Sear the meatballs for 2-3 minutes on each side until golden all over. You may need to do this in batches.

Step 4

Remove the seared meatballs from the skillet and set them aside on a plate.

Step 5

In the same skillet, lower the heat and add the lemon juice and chicken or vegetable stock. Stir gently to combine, scraping any browned bits from the bottom of the skillet for extra flavor.

Step 6

Return the meatballs to the skillet, arranging them in the lemony sauce. Cover the skillet with a lid and let the meatballs simmer over low heat for 12-15 minutes, or until they are cooked through and tender.

Step 7

Taste the sauce and adjust seasoning with additional salt or pepper if needed. Garnish the meatballs with extra chopped parsley or lemon zest for added brightness before serving.

Step 8

Serve the lemony veal meatballs warm over rice, pasta, or with a side of crusty bread to soak up the flavorful sauce.
