Ingredients

  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Chopped fresh parsley
  • 1 cup Diced cucumber
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Red onion, thinly sliced
  • 4 cups Mixed salad greens
  • 0.25 cup Crumbled feta cheese (optional)

Directions

Step 1

In a medium bowl, toss the shrimp with 1 tablespoon of lemon juice, lemon zest, 1 tablespoon of olive oil, minced garlic, salt, and black pepper.

Step 2

Heat a large skillet over medium-high heat. Add the shrimp to the skillet in a single layer and cook for 2-3 minutes on each side until just opaque and pink. Remove from heat and set aside to cool slightly.

Step 3

In a large mixing bowl, combine cucumber, cherry tomatoes, red onion, and cooked shrimp.
