Ingredients

  • 6 cups Chicken or vegetable stock
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 medium Shallot
  • 2 cloves Garlic
  • 0.5 cups Dry white wine (optional)
  • 0.5 cups Parmesan cheese, grated
  • 1 teaspoon Lemon zest
  • 2 tablespoons Lemon juice
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 1 tablespoon Fresh parsley (optional)

Directions

Step 1

In a medium saucepan, heat the chicken or vegetable stock over low heat. Keep it warm while preparing the risotto.

Step 2

Finely dice the shallot and mince the garlic. Set aside.

Step 3

In a large skillet or wide saucepan, heat the olive oil and 1 tablespoon of butter over medium heat.

Add the diced shallot to the pan and sauté for 2-3 minutes, until softened and translucent. Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.

Stir in the Arborio rice, ensuring each grain is coated in oil and butter. Toast the rice for 1-2 minutes until it becomes fragrant.

Once the risotto is cooked, remove it from heat and stir in the remaining butter, grated Parmesan cheese, lemon zest, and lemon juice. Mix well to combine.

Season the risotto with salt and black pepper to taste.
