Ingredients

  • 1 cup long-grain white rice

  • 2 cups chicken or vegetable broth
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice, freshly squeezed
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the rice in cold water until the water runs clear. Drain well and set aside.

In a medium saucepan, melt the butter and heat the olive oil over medium heat.

Add the chopped onion and sauté until softened and translucent, about 3-4 minutes.
