Directions

Step 1

Wash and scrub the red potatoes well. Cut them into bite-sized pieces, leaving the skin on for texture and flavor.

Place the potatoes in a large pot and cover with cold water. Add a generous pinch of salt to the water. Bring to a boil over medium-high heat, then reduce heat to a simmer. Cook for 15-20 minutes, or until the potatoes are fork-tender but not mushy.
