Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar
  • 0.25 cup granulated sugar
  • 0.75 cup unsalted butter
  • 1 cup raisins
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2

In a medium bowl, mix together the rolled oats, flour, brown sugar, granulated sugar, baking powder, and salt.

Step 3

Melt the unsalted butter and pour it over the dry mixture. Stir well until the mixture resembles coarse crumbs.

Reserve 1/2 cup of this crumb mixture for the topping and set it aside.
