In a small bowl, mix together lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper. Reserve 2 tablespoons of this mixture for later use.
Place the pork chops in a shallow dish or resealable plastic bag and pour the remaining marinade over them. Let the pork chops marinate for at least 20 minutes, or up to 4 hours in the refrigerator.
