Ingredients

  • 450 grams frozen lima beans
  • 2 tablespoons unsalted butter
  • 2 large garlic cloves
  • 1 medium lemon
  • 40 grams Parmesan cheese
  • 1 tablespoon olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons cracked black pepper
  • 2 tablespoons parsley
  • 120 milliliters water

Directions

Step 1

Bring a medium pot of water to a boil and add a generous pinch of salt. Add the frozen lima beans and cook for 5-6 minutes or until tender. Drain and set aside.

Step 2

While the beans are cooking, finely mince the garlic and zest the lemon using a fine grater. Squeeze the lemon to extract its juice and set aside the zest and juice separately.

Step 3

In a large skillet, heat the olive oil and butter over medium heat until melted. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Add the cooked lima beans to the skillet, tossing them to coat evenly in the garlic butter mixture.
