Ingredients

  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 medium Carrot, diced
  • 2 stalks Celery stalks, diced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 1 cup Red lentils, rinsed and drained
  • 6 cups Vegetable broth
  • 4 cups Swiss chard, stems removed and leaves chopped
  • 3 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Lemon zest
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, and cook for 4-5 minutes, stirring occasionally, until softened and translucent.

Step 3

Stir in the minced garlic, diced carrots, and diced celery. Cook for another 3-4 minutes until the vegetables are slightly softened.

Step 4

Add the ground cumin, ground coriander, and paprika. Stir well to coat the vegetables in the spices and cook for 1 minute to release their flavor.

Step 5

Stir in the rinsed and drained red lentils, followed by the vegetable broth. Bring the mixture to a boil.

Step 6

Reduce the heat to low, cover the pot, and let the soup simmer for about 15-20 minutes, or until the lentils are tender and beginning to break down.

Add the chopped Swiss chard to the pot and stir well. Cook for an additional 5 minutes, until the chard is wilted and tender.
