Ingredients

  • 2 cups frozen shelled edamame
  • 2 pieces garlic cloves
  • 3 tablespoons tahini
  • 3 tablespoons lemon juice

  • 3 tablespoons olive oil
  • 2 tablespoons water
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Fill a medium saucepan with water and bring it to a boil over medium-high heat.

Add the frozen shelled edamame to the boiling water and cook for 4-5 minutes, or until tender.

Drain the edamame and transfer it to a bowl of ice water to cool for 1 minute. Drain again and pat dry.

In a food processor, combine the cooked edamame, garlic cloves, tahini, lemon juice, lemon zest, olive oil, water, ground cumin, salt, black pepper, and red pepper flakes (if using).
