  • 2 large, boneless and skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces, sliced white mushrooms
  • 2 cloves, minced garlic
  • 0.75 cup chicken broth
  • 0.5 cup, freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons, chopped (optional, for garnish) fresh parsley

Directions

Step 1

Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.

Step 2

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat until hot and shimmering.

Add the chicken breasts to the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set aside on a plate, tented loosely with foil to keep warm.
