  • 2 pieces boneless, skinless chicken breasts

  • 2 pieces carrot, diced
  • 2 pieces celery stalks, diced
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 0.75 cups uncooked rice or orzo pasta
  • 0.25 cups lemon juice, freshly squeezed
  • 1 teaspoon lemon zest, freshly grated
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 cup water (if needed)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Season the chicken breasts with 1/2 teaspoon salt and 1/4 teaspoon black pepper, then add them to the pot. Sear on both sides until golden brown, about 3-4 minutes per side. Remove the chicken and set aside.

Step 3

In the same pot, add the diced carrots, celery, and onion. Sauté for 5-6 minutes until the vegetables begin to soften.

Add the minced garlic and cook for an additional 30 seconds until fragrant.
