Ingredients

  • 2 tablespoons olive oil
  • 1 medium (diced) yellow onion
  • 6 stalks (chopped) celery
  • 2 cloves (minced) garlic
  • 4 cups vegetable broth
  • 1 medium (peeled and diced) Russet potato
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons (chopped, for garnish) fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced yellow onion to the pot and sauté for 3-4 minutes until softened and translucent.

Step 3

Add the chopped celery and minced garlic. Cook for another 2-3 minutes, stirring occasionally.

Step 4

Pour in the vegetable broth and add the diced Russet potato. Bring to a boil over high heat.

Reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the celery and potato are tender.
