Ingredients

  • 4 cups Artichoke hearts (canned or frozen, drained if canned)
  • 2 large Yellow onions
  • 3 tablespoons Olive oil
  • 3 cloves Garlic cloves
  • 2 teaspoons Lemon zest
  • 2 tablespoons Fresh lemon juice
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, finely grated
  • 1 cup Breadcrumbs (preferably panko)
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Butter, melted

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Thinly slice the onions and finely mince the garlic.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onions and a pinch of salt, cooking until soft and caramelized, about 15 minutes. Stir occasionally to prevent burning.

Step 4

Add the minced garlic to the onions and cook for another 2 minutes until fragrant.

Step 5

In a large mixing bowl, combine the caramelized onions, artichoke hearts, lemon zest, lemon juice, heavy cream, 1/2 cup of Parmesan cheese, salt, and pepper. Mix until evenly coated.

Transfer the mixture to a greased 9x9-inch (or similar-sized) baking dish, spreading it out evenly.
