Ingredients

  • 12 oz Angel hair pasta
  • 14 oz Artichoke hearts (canned or jarred, drained and quartered)
  • 1 whole Lemon (zested and juiced)
  • 1 cup Parmesan cheese (grated)
  • 3 tbsp Olive oil
  • 3 cloves Garlic (minced)
  • 2 tbsp Unsalted butter
  • 2 tbsp Fresh parsley (chopped)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper (freshly ground)
  • 0.25 tsp Red pepper flakes (optional)
  • 0.5 cup Pasta water (reserved)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the angel hair pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta.

Step 2

While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Stir in the artichoke hearts and cook for 3-4 minutes until heated through. Add the butter and let it melt, mixing it evenly into the skillet.
