  • 2 stalks fresh lemongrass stalks
  • 4 cups water
  • 2 tablespoons honey
  • 1 inch piece fresh ginger (optional)
  • 2 tablespoons fresh lime juice (optional)

Directions

Step 1

Start by thoroughly washing the lemongrass stalks under running water to remove any dirt.

Step 2

Once clean, trim the ends and remove any dry outer leaves from the lemongrass stalks.

Cut the stalks into 1-2 inch pieces, then gently bruise them using the side of a knife or a rolling pin to release their essential oils.

If using ginger, peel the ginger piece and slice it thinly.

In a medium saucepan, bring 4 cups of water to a gentle boil over medium heat.

Add the prepared lemongrass pieces and sliced ginger (if using) to the boiling water.
