Ingredients

  • 4 pieces Pork chops (bone-in or boneless)
  • 2 stalks Lemongrass stalks (white and tender parts only)
  • 4 cloves Garlic cloves
  • 2 medium Shallots
  • 2 tablespoons Fish sauce
  • 1 tablespoon Soy sauce
  • 1 tablespoon Brown sugar
  • 1 tablespoon Oyster sauce
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Chili flakes (optional)
  • 4 pieces Lime wedges (for serving)
  • 2 tablespoons Fresh cilantro (for garnish)

Directions

Step 1

Start by preparing the marinade. Finely mince the lemongrass, garlic, and shallots, or blend them into a paste using a food processor.

Step 2

In a large bowl, mix the minced lemongrass, garlic, and shallots with the fish sauce, soy sauce, brown sugar, oyster sauce, vegetable oil, ground black pepper, and chili flakes (if using).

Step 3

Rinse and pat the pork chops dry with paper towels. Add them to the marinade, making sure they’re well-coated. Cover the bowl and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Step 4

When ready to cook, remove the pork chops from the refrigerator and let them come to room temperature for about 20 minutes.

Step 5

Preheat a grill, grill pan, or skillet over medium-high heat. Lightly oil the cooking surface to prevent sticking.

Step 6

Cook the pork chops for 5-7 minutes on each side, depending on thickness, or until the internal temperature reaches 145°F (63°C). Avoid overcooking to keep the meat juicy.

Step 7

Remove the pork chops from the heat and let them rest for 5 minutes to retain their juices.

Step 8

Garnish with fresh cilantro and serve with lime wedges on the side for an extra zesty kick. Pair with steamed rice, noodles, or a fresh salad.
