Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 0.5 cups Unsalted butter (softened)
  • 0.75 cups Granulated sugar
  • 1 large Egg
  • 1 tablespoon Lemon zest
  • 2 tablespoons Fresh lemon juice
  • 0.5 cups Plain Greek yogurt
  • 1 cups Powdered sugar
  • 2 tablespoons Fresh lemon juice (for glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large bowl, use an electric mixer to beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Add the egg, lemon zest, and fresh lemon juice to the butter mixture. Beat until fully combined.

Mix in the Greek yogurt until smooth. Scrape down the sides of the bowl as necessary.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
