Ingredients

  • 2 cups all-purpose flour
  • 0.333 cup granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter (cold, diced)
  • 1 tablespoon lemon zest
  • 0.5 cup chopped walnuts
  • 0.667 cup heavy cream (plus extra for brushing)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 0.5 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, diced butter to the flour mixture. Use a pastry cutter or your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

Stir in the lemon zest and chopped walnuts.

Step 5

In a small bowl, combine the heavy cream, lemon juice, and vanilla extract. Pour this wet mixture into the dry mixture and gently stir until the dough just comes together. Be careful not to overmix.

Step 6

Turn the dough out onto a lightly floured surface. Gently knead it a few times to bring it together, then shape it into a 1-inch thick circle.

Step 7

Cut the dough into 8 wedges (like a pizza) and place the wedges on the prepared baking sheet, spacing them slightly apart.

Step 8

Brush the tops of the scones with a little additional heavy cream to help them brown.

Step 9

Bake the scones in the preheated oven for 12-15 minutes, or until they are golden brown and cooked through.

Step 10

While the scones bake, prepare the glaze by whisking together the powdered sugar and 2 tablespoons of fresh lemon juice in a small bowl until smooth.

Step 11

Allow the scones to cool on a wire rack for about 10 minutes, then drizzle the lemon glaze over the top.

Step 12

Serve the scones slightly warm or at room temperature. Enjoy!
