  • 400 grams linguine
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves, minced
  • 2 teaspoons lemon zest
  • 4 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 4 liters water for boiling
  • 1 tablespoon salt for pasta water

Directions

Step 1

Bring a large pot of water (4 liters) to a boil and add 1 tablespoon of salt.

Step 2

Cook the linguine (400 grams) in the boiling water according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining the linguine.

Step 3

While the pasta cooks, heat 3 tablespoons of unsalted butter and 2 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Add 3 minced garlic cloves to the skillet and sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 5

Mix in 2 teaspoons of lemon zest and 4 tablespoons of fresh lemon juice. Stir well to combine.

Add the drained linguine to the skillet and toss to coat. If the pasta seems dry, gradually add the reserved pasta water, one tablespoon at a time, until your desired consistency is achieved.
