Ingredients

  • 500 grams Mascarpone cheese
  • 300 milliliters Heavy whipping cream
  • 150 grams Granulated sugar
  • 2 medium lemons Lemon zest
  • 120 milliliters Lemon juice
  • 4 large Egg yolks
  • 20 pieces Ladyfinger cookies
  • 60 milliliters Limoncello (optional)
  • 2 tablespoons Powdered sugar
  • 1 tablespoon Unsweetened cocoa powder or lemon zest (for garnish)

Directions

Step 1

In a large mixing bowl, whisk the mascarpone cheese until smooth and creamy. Set aside.

Step 2

In a separate bowl, using a hand or stand mixer, whip the heavy cream with the powdered sugar until soft peaks form. Gently fold the whipped cream into the mascarpone cheese mixture.

Step 3

In a heatproof bowl, combine the egg yolks and granulated sugar. Place the bowl over a pot of simmering water (double boiler method) and whisk continuously for 5-7 minutes, until the mixture becomes thick, pale, and the sugar dissolves completely. Remove from heat and allow to cool slightly.

Step 4

Stir the lemon zest and lemon juice into the egg and sugar mixture. Gradually fold this mixture into the mascarpone and cream mixture until well combined. If desired, mix in limoncello for an extra citrusy kick.

Step 5

In a shallow bowl, prepare the lemon soaking mixture. Combine the remaining lemon juice with an equal amount of water (or substitute limoncello for part of the liquid). Briefly dip each ladyfinger into the mixture; be careful not to oversaturate as they will become too mushy.

Layer half of the soaked ladyfingers in the bottom of a 9x9-inch (or similar-sized) dish. Spread half of the lemon mascarpone mixture evenly over the ladyfingers.

Step 7

Repeat with a second layer of soaked ladyfingers, followed by the remaining lemon mascarpone mixture, smoothing the top.

Step 8

Cover and refrigerate for at least 6 hours, or overnight, to allow the flavors to meld and the tiramisu to set.

Step 9

Before serving, dust the top with unsweetened cocoa powder or sprinkle with additional lemon zest for garnish.
