  • 3 tablespoons Freshly squeezed lemon juice
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Olive oil (light or extra light)
  • 0.25 cup Powdered sugar
  • 2 tablespoons Honey (for glaze)
  • 1 tablespoon Fresh lemon juice (for glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with a light coating of olive oil or line it with parchment paper.

In a medium bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt. Set aside.
