Ingredients

  • 113 grams Unsalted butter, softened
  • 85 grams Cream cheese, softened
  • 130 grams All-purpose flour
  • 120 grams Granulated sugar
  • 1 large Egg
  • 45 ml Fresh lemon juice
  • 1 teaspoon Lemon zest
  • 0.5 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar, for garnish

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 24-cup mini muffin tin or line it with mini baking cups.

Step 2

In a mixing bowl, beat together the softened butter and cream cheese until creamy and smooth, about 2-3 minutes.

Step 3

Add the all-purpose flour gradually and mix until a soft dough forms. Divide the dough into 24 equal pieces.

Step 4

Press one piece of dough into the bottom and up the sides of each cup in the mini muffin tin, creating a small tart shell.

Step 5

In another mixing bowl, whisk together the granulated sugar, egg, lemon juice, lemon zest, and vanilla extract until smooth and well combined.

Spoon approximately 1 teaspoon of the lemon filling into each prepared tart shell, being careful not to overfill.

Bake in the preheated oven for 18-20 minutes, or until the edges of the crust are lightly golden and the filling is set.
