Ingredients

  • 250 grams All-purpose flour
  • 125 grams Unsalted butter (cold, cubed)
  • 50 grams Powdered sugar
  • 1 large Egg yolk
  • 2 tablespoons Cold water
  • 3 medium Lemons (zested and juiced)
  • 150 grams Granulated sugar
  • 3 large Eggs
  • 75 grams Unsalted butter

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a large mixing bowl, combine the all-purpose flour and powdered sugar. Add the cold, cubed butter and use your fingertips to rub it into the flour mixture until it resembles breadcrumbs.

Step 3

Add the egg yolk and cold water to the mixture. Knead gently until it forms a smooth dough. Be careful not to overwork the dough. Wrap it in plastic wrap and refrigerate for 20 minutes.

Step 4

Roll out the chilled dough on a lightly floured surface to about 3 mm thickness. Cut out circles slightly larger than your tart molds and press the dough into the molds, trimming any excess. Prick the base of the dough with a fork.

Step 5

Line the tart shells with parchment paper and fill them with baking beans or rice. Blind bake for 10 minutes, then remove the parchment and beans and bake for an additional 5 minutes until golden. Set aside to cool.

Step 6

For the lemon filling, whisk together the lemon juice, lemon zest, granulated sugar, and eggs in a heatproof bowl. Place the bowl over a saucepan of simmering water, ensuring the bottom of the bowl does not touch the water.

Step 7

Stir the mixture constantly until it thickens, about 8-10 minutes. Remove from heat and stir in the unsalted butter until melted and smooth.

Step 8

Spoon the lemon filling into the cooled tart shells, smoothing the tops with the back of a spoon.

Step 9

Chill the tarts in the refrigerator for at least 1 hour before serving to allow the filling to set.

Step 10

Optional: Garnish the tarts with a dollop of whipped cream, fresh berries, or a sprinkle of powdered sugar before serving.
