Ingredients

  • 400 grams Tagliatelle pasta
  • 2 whole Lemon (zest and juice)
  • 200 milliliters Heavy cream
  • 50 grams Grated Parmesan cheese
  • 2 tablespoons Unsalted butter
  • 1 whole Garlic clove
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Add the tagliatelle and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

Step 2

While the pasta cooks, zest and juice the lemons. Set both aside.

Step 3

In a large skillet, heat olive oil and butter over medium heat until melted. Add the minced garlic clove and sauté for 1 minute until fragrant but not browned.

Step 4

Stir in the heavy cream, lemon zest, and lemon juice. Simmer gently for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.

Step 5

Lower the heat and stir in the grated Parmesan cheese. Mix well until the cheese melts into the sauce. Season with salt and ground black pepper to taste.

Step 6

Add the cooked tagliatelle to the skillet, tossing to coat the pasta in the sauce. If the sauce is too thick, add a bit of the reserved pasta water, a tablespoon at a time, until the desired consistency is reached.

Step 7

Taste and adjust seasoning if needed. Sprinkle with fresh parsley just before serving.

Step 8

Serve immediately, optionally garnished with additional Parmesan and lemon zest.
