Ingredients

  • 4 large Fresh lemons
  • 200 grams Granulated sugar
  • 240 ml Water
  • 2 teaspoons Lemon zest

Directions

Step 1

Wash the lemons thoroughly and pat them dry.

Step 2

Using a microplane or fine grater, zest two of the lemons until you have approximately 2 teaspoons of zest. Set aside.

Step 3

Juice the lemons to extract approximately 180 ml of fresh lemon juice. Strain the juice to remove seeds and pulp.

Step 4

In a medium saucepan, combine the sugar and water over medium heat. Stir continuously until the sugar completely dissolves (about 2-3 minutes).

Step 5

Add the fresh lemon juice and lemon zest to the saucepan, stirring to combine.

Step 6

Bring the mixture to a gentle boil, then reduce the heat to medium-low and let it simmer for about 10 minutes. Stir occasionally and watch for the syrup to thicken slightly.

Remove the saucepan from heat and let the syrup cool for 10-15 minutes. As it cools, it will thicken further.
