  • 50 g Caster sugar
  • 75 ml Dry white wine
  • 1 tbsp Brandy
  • 6 leaves Fresh mint leaves (optional, for garnish)
  • 2 slices Lemon slices (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the lemon juice, lemon zest, caster sugar, white wine, and brandy. Stir gently until the sugar dissolves completely.

Step 2

Using a hand or stand mixer, begin whipping the heavy cream in a separate chilled bowl until it forms soft peaks (do not overwhip).

Step 3

Gradually pour the lemon and wine mixture into the whipped cream, folding gently with a spatula to fully incorporate. Be careful not to deflate the cream.
