Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 2 tablespoons olive oil
  • 3 cups fresh spinach
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 cups parmesan cheese (optional)

Directions

Step 1

In a medium saucepan, bring 1.25 cups of water, 1 tablespoon of olive oil, and 0.5 teaspoons of salt to a boil.

Step 2

Once boiling, remove the saucepan from heat and stir in the couscous. Cover with a lid and let it sit for 5 minutes.

Step 3

Meanwhile, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
