Ingredients

  • 4 pieces Boneless, skinless chicken thighs
  • 2 pieces Lemon
  • 2 tablespoons Olive oil
  • 3 pieces Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 0.5 teaspoon Turmeric
  • 0.25 teaspoon Ground cinnamon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 15-ounce can Canned chickpeas, drained and rinsed
  • 1 cup Chicken or vegetable broth
  • 2 tablespoons Fresh parsley, chopped
  • 1 medium Red onion
  • 0.5 cup Greek yogurt (optional, for serving)

Directions

Step 1

Zest and juice one of the lemons, and cut the other lemon into slices for garnish. Set aside.

Step 2

In a small bowl, combine ground cumin, ground coriander, paprika, turmeric, ground cinnamon, salt, and black pepper. Mix well to create the spice blend.

Step 3

Pat the chicken thighs dry with paper towels and rub them with half of the spice blend. Ensure the chicken is evenly coated.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sear the chicken thighs for 3–4 minutes per side until golden brown. Remove from the skillet and set aside.

Thinly slice the red onion and mince the garlic.

In the same skillet, add the remaining tablespoon of olive oil. Sauté the red onion for 2–3 minutes until softened. Then, add the minced garlic and cook for an additional 1 minute until fragrant.

Add the drained chickpeas, lemon zest, lemon juice, and chicken or vegetable broth to the skillet. Stir well to combine.

Nestle the seared chicken thighs back into the skillet, ensuring they are partially submerged in the liquid. Bring the mixture to a simmer over medium-low heat.

Cover the skillet and cook for 20 minutes, or until the chicken is cooked through and the liquid has slightly reduced.

Remove the skillet from heat and garnish with fresh parsley and lemon slices.
