Zest and juice one of the lemons, and cut the other lemon into slices for garnish. Set aside.
In a small bowl, combine ground cumin, ground coriander, paprika, turmeric, ground cinnamon, salt, and black pepper. Mix well to create the spice blend.
Pat the chicken thighs dry with paper towels and rub them with half of the spice blend. Ensure the chicken is evenly coated.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sear the chicken thighs for 3–4 minutes per side until golden brown. Remove from the skillet and set aside.
